The Holiday Bikini – How to Make It

WThis is a home-style interpretation of a beverage from our latest cocktail list. This is a batch premix that's packed with tastes of a festive period, making it ideal for a festive gathering. Reserve the remaining citrus syrup to use in morning drinks, sweets, or to mix another batch of bikinis.

The Bikini Cocktail

Yields 10 guests

To make the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Drink (makes 850ml, serving 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Method

To prepare the Citrus Syrup: Place the listed items inside a pan, heat until it reaches a simmer, stirring so the sugar melts. Then, turn off the heat allowing it to cool completely. Pour into an sealable bottle, seal and store in the fridge, where it will keep for up to a month.

To make Cocktail Base: Combine all the liquid ingredients into a large bottle, allow it to infuse for 60 minutes, then filter it best through muslin, to ensure it's completely strained.

To serve: Pour 85ml from the cocktail base into a stirring glass filled with ice, and agitate lightly for about 60 seconds until cold. Pour into an frosted cocktail glass or a similar vessel, decorate with the cranberries and finish with a quick spritz with the mandarin essence above the glass.
